Tuyong Dilis, Spinach and Potato Salad Recipe

INGREDIENTS:


15 pcs. baby potatoes
15 pcs. dried fish dilis
1/2 Cup baby spinach
1/2 pc. red onion (sliced)
1 Tablespoon celery (cubes)
2 Tablespoon Butter
pinch of salt and black pepper to taste




DIRECTIONS:



1.) In hot boiling water, blanch peeled baby potatoes until lightly done then place into ice cold water to stop the cooking process.

2.) In frying pan put little vegetable oil, pan fry dried fish dilis until golden brown and crispy. Then place into a bowl and set aside.

3.) Wash and clean baby spinach, remove or cut off it's roots and place it into ice cold water.

4.) In another frying pan put 2 tablespoon butter caramelize onion and celery then place blanched potatoes, season with pinch of salt and black pepper. Stir fry for half minute then remove from the fire and set aside.

5.) Plating; In a plate drop some baby spinach, drizzle with vegetable oil, then put stir fry potatoes around and lastly drop some crispy dilis.
