BBQ Pork Belly recipe







Ingredients:

1/4kilo of pork belly
1/4cup pine apple juice
5Tblsp delmonte tomato ketchup
2Tblsp turmeric
1Tblsp kikkoman soy sauce
2Tblsp brown sugar
2cloves garlic
1pc onion medium size
1tsp of salt
pinch of black pepper and garlic powder

Directions:

1.) Make a diamond cut shape in pork belly fat and dry it off with paper towel.

2.) Marinate for 2hrs with soy sauce, add little bit of vinegar, onion, cloves of garlic, season with garlic powder, salt and pepper.

3.) BBQ sauce delmonte tomato ketchup, soy sauce, sugar, and turmeric.

4.)Grill marinated pork belly into hot griller , fat first when it turns red and brown in color turn it over and cook the other side. Avoid the grilled pork to be dry you can always brush it with BBQ sauce.

5.) When its done, set aside the pork and let it rest for 5 minutes before slicing to kept it's juices pork belly.

How to make bbq sauce:

Heat up stockpot or frying pan put 1/4 cup pine apple juice or any chicken/pork broth. Add 5Tblp tomato ketchup, 2Tblsp brown sugar, 1Tbsp soy sauce, season with pinch of salt and black pepper. Bring to a boil for a minute and simmer until reduce and when thick enough in texture it's now ready your bbq sauce.,.
 
 
 

Nilagang Baka (Pinoy beef stew)

Ingredients:

1kilo of beef any part/cut
2pcs red onions cut into half
4cloves of garlic
1pc Carrot
1pc potato cut into cubes
1pc sweetcorn
8pcs of cabbage leaves
2Tblsp of salt
6Cups of water

Procedure:

1.) Put 6cups of water on a stockpot, add the beef bring to a boil for 30minutes then simmer for 1-1/2 hour .

2.) When beef is still tough simmer for another half an hour, put sweetcorn add the potato and carrots.

3.) For seasoning add 2 tablespoons of salt then boil, for 1 minute just to make sure all flavors will incorporate.

4.) Add the cabbage leaves at the end of cooking so it will not over cook.

5.) serve with rice and share it to your family..
And always try to taste if your salt are enough for its taste and slow type of cooking are still the best way in nilagang baka/ beef stew.
 
 

Crispy Sea Stix (Crab stick)







Ingredients:

5pcs. Crab-stick
1 pad dried nori
2 egg yolks
1/2 cup of breadcrumbs
1/2 cup cornstarch
pinch of salt, cheese powder and garlic powder to taste
350ml cooking oil

Procedure

1.) Wrap crab sticks with dried seaweed, then coat with cornstarch, egg yolks , and breadcrumbs.

2.) On a deep fryer put 350ml of cooking oil. In medium heat cook sea stix, when it turns golden brown in color it's done.

3.) serve with your favorite dipping sauce.

Adobong Sitaw (String Beans)

Ingredients:

about 1 bundles of sitaw (string beans), cut into 2″ lengths, discarding the ends
1/4 kilo pork cubes cut
3 tbsp vinegar
3tblsp oil
1 medium size onion, chopped
1 clove garlic, minced
3 tbsp toyo (soy sauce)
Pinch of salt and pepper

Procedure:

1. Heat oil on a pan over medium flame. Saute garlic and onions. Add pork. Add salt and pepper to taste. Cook pork until almost brown.

2. Add water and bring to a boil. Lower down the heat and simmer for about 15 minutes.

3. Add the toyo, vinegar, and sitaw. Simmer for another 10 minutes.

5. Serve with rice
 
 

Paksiw na tulingan (Tuna cook in vinegar)


Ingredients:

1 tulingan medium size (cleaned and cut into pieces)
1/2 cup of vinegar
1/4 cup of water
2-3 cloves of garlic (minced)
1 large onion (chopped)
1 thumb ginger (crushed)
1 tsp of peppercorn
salt to taste
1 Tbsp fish sauce (optional)
2 lime juice

Procedure:

Put tuna in a pot.
Pour the vinegar.
Add garlic, onion, peppercorn, ginger, lime juice, salt and fish sauce.
Cook for 15-20 minutes in a slow to medium heat stove.
Serve with rice and vegetables.

Pinoy fried-rice with roasted chicken

Ingredients:

4 cups cooked rice

3 eggs (hard boiled)
2 chicken wings
3 pieces tomatoes (cubes)
2 cloves of garlic( mince)
1 large onion (mince)
1tblsp sesame oil
salt and pepper to taste

Procedure:

On frying pan put little amount of sesame oil, stir fry onion, garlic and tomatoes.

Add the cook rice and mix until all ingredients well corporated, and salt and pepper to taste.

bring to low heat no more stir for 3 minutes add sesame oil for aroma.

Add roasted chicken wings on top and hard boiled eggs or spring onions...
 
 

Binignit/Ginataan

Binignit is a vegetable soup from the Visayas region in the
Philippines.

Traditionally made with slices of Saba banana, taro, sweet potato.

How to cook

Ingredients:

2C of water
2C of Coconut milk
1/4 sugar white or brown
1C of rice cooked
2pcs. sweet potato in medium size
3pcs saba banana
2pcs. taro medium size
2tblsp. of ube halaya
pinch of salt

Direction;

1.) Cook taro root, sweet potato, and Saba in diluted coconut milk.

2.) Add cooked rice, sugar, and salt

3.) Add ube halaya then Simmer until all ingredients are tender and mixture is thick.

4.) Add 2 cups coconut milk. Cook in medium heat.

5.) Do not boil or liquid will curdle. Adjust amount of coconut milk to your available ingredients.Serve hot.

1/4 kilo of beef
1pc carrots
1pc chayote
1pc red bell pepper
2tbsp of soy sauce
2tbsp of brown sugar
pinch of garlic powder, salt, pepper, paprika,

Directions;

1.) Marinate beef over night with soy sauce, sugar,garlic powder, paprika, black pepper and salt to taste.

2.) Cut veges to long strips. soak with sugar and vinegar mixture bring to simmer. When translucent achieve it's done.

3.) Roasting- high heat temperature in the pan, put little amount of oil roast the marinated beef. Then put into the oven or microwave for 5 minutes remember to cook it medium.

4.) The clear sauce is the vinegar reduction were the veges cook.
 
 

Steamed tahong(Asian green mussel)


Steamed tahong(Asian green mussel)

Ingredients:

30pcs. tahong
1tsp. ginger
2pcs. lemon grass
1c water
pinch of salt

Directions:

1.) On a steamer put water then boil add lemon grass, and ginger.

2.) put tahong on steamer, pinch of salt to taste

3.) steam until mussel will open for 6 minutes.
 
 

Ginataang lambay (deep sea crab)

Ingredients:

1kilo lambay(deep sea crab)
1 1/2C coconut milk
1pc red onions
2cloves garlic
2tblsp cooking oil
pinch of paprika black pepper and salt

Directions:

Heat up the pan put cooking oil, stir fry onions, cloves of garlic until translucent in color. Add lambay crab and simmer for 1 minute. And its ready to put coconut milk season with black pepper,paprika and salt bring to a boil for 1 minute then simmer for 5minutes..

ready to serve add spring onions for garnish...
 
 

Filipino Style spaghetti


Ingredients:

1 kg. spaghetti noodles
1/2 kg. ground beef
1/2 kg. ground pork
1/4 kg. hotdogs, diagonally sliced

1 kg. tomato sauce (or 3/4 kg. tomato sauce and 1/4 kg. banana catsup)
3 pieces laurel leaves (bay leaves)
1/4 cup brown or white sugar (reduce to 1/8 cup if using banana catsup)
2 green bell peppers, diced
2 onions, chopped
1 head garlic, minced
3 tablespoons of cooking oil
1 cup of water
Salt and pepper to taste
1/2 cup grated cheese

Directions:

1.) Cook spaghetti noodles according to package instructions.

2.) In a sauce pan or wok, sauté garlic and onions in cooking oil.

3.) Add ground beef, ground pork, laurel leaves, bell pepper and a cup of water. Bring to a boil and let simmer for 10 minutes.

4.) Add tomato sauce or combination of banana catsup and tomato sauce, salt and pepper to taste then let simmer for another 10 minutes

5.) Add brown sugar and hotdogs. Continue to simmer for an additional 5 minutes.

6.) Optional: add hot sauce for more spice if desired.

7.) Serve with the cooked spaghetti noodles and grated cheese on top.
